This is a recipe that I have adjusted that is based on Wild Willy’s Number One-derful Rub in the book “Smoke & Spice” by Cheryl and Bill Jamison. This is truly a wonderful rib rub recipe because it is a great basis for making your own rib rub the way you like it! Simple variations to alter the amount of black and cayenne pepper can add or reduce the level of spice. Likewise, if you prefer a sweeter rub, increase the sugar.
This also works on chicken and pork.

- 1/4 cup paprika
- 2 Tbs salt
- 3 Tbs sugar (turbinado is a good choice here – less likely to burn – but regular sugar is fine)
- 1 Tbs ground black pepper
- 2 tsp chili powder
- 1 tablespoons garlic powder
- 1 tablespoons onion powder
- 1 teaspoon cayenne
Mix the ingredients in a bowl or large measuring cup (measuring cup is easier to pour from into a shaker). Use an empty spice shaker you kept when you ran out of another rub or spice (you kept one, right?).
Makes about 1 cup, which should be enough for 2 – 3 slabs.
